Just use butternut squash instead. Roast it in the oven until it's soft and mash it up. Or boil it on the stove in a little water until it's mashed. Honestly, you'll not notice the difference. A friend made a pie once with butternut squash instead of pumpkin and I couldn't tell the difference. In fact, I liked it better!
